Type of article: Article
Summary
The authors have observed a variation in the growth rate of bacteria and an extension of their growth phase during cold storage of meat which was electronically stimulated at a temperature of 0 deg C. The part played by the film over the microorganisms of the different meat substrates is also discussed. C.C.
