This study conducted in Australia focused on vacuum-packed striploins and cube rolls processed by 6 establishments. The products were stored at -0.5°C and the shelf life was determined. Meat pH, temperature and CO2 concentration appeared to create conditions under which little or no microbial growth occurred.
