Summary

Back up by detailed diagrams, the author gives a thorough presentation of the design and operation of an ammonia refrigerating installation built for storage of apples, pears and garlic of different origins. The defrosting and humidity-control processes are described. With the installation it is also possible to use a few cold rooms for frozen food or, for that matter, for melons, which require temperatures far above 0 deg C.
