Summary
Variations in the mass of fish in connection with changing ultrastructures of muscle tissue were studied. The subject of the studies was Clupea harengus membras (Baltic sea herring) stored in pressurized-air circulated water. This process was accompanied by a 10.5% increase in the mass of the individual fish due to absorption of water. The changes in the microstructure of fish tissue and post-mortal decomposition products bring about conditions causing the bacterial contamination of the originally germ-free muscular system, thereby accelerating the deterioration of the raw material.
