A SIMPLIFIED MATHEMATICAL MODEL FOR FREEZING TIME CALCULATION IN PLATE FREEZERS.

Summary

A MICROSCOPIC ENERGY BALANCE WITH SIMULTANEOUS CHANGE OF PHASE TOGETHER WITH EQUATIONS FOR PREDICTING THE THERMAL PROPERTIES AS A FUNCTION OF THE ICE CONTENT AND A CRYOSCOPIC DESCENT MODEL ARE USED TO SIMULATE THE FREEZING OF BEEF IN PLATE FREEZERS UNDER SYMMETRIC AND NON SYMMETRIC CONDITIONS. THE EQUATIONS ARE SOLVED NUMERICALLY FOR OBTAINING TEMPERATURE PROFILES AS WELL AS FREEZING TIMES UNDER DIFFERENT OPERATING CONDITIONS. ON THE BASIS OF THE BEHAVIOR DETECTED WITH THE NUMERICAL MODEL, A SIMPLIFIED MODEL FOR CALCULATING FREEZING TIMES IS PROPOSED.
