IN ORDER TO STUDY MASS LOSS DURING THE FREEZING AND STORAGE OF FROZEN FOODS, A WIND TUNNEL WAS BUILT, IN WHICH AIR IS COOLED BY LIQUID NITROGEN. AIR TEMPERATURE, VELOCITY AND RELATIVE HUMIDITY ARE CONTROLLED. MASS LOSSES ARE DETERMINED BY WEIGHING THE CYLINDRICAL SAMPLE STUDIED, WITH BOTH ENDS INSULATED, AT THE CENTRE OF THE TEST CHANNEL. THE RESULTS OF THE FIRST TESTS ARE GIVEN.
