A PROTOTYPE PLATE FREEZER HAS OPERATED SUCCESSFULLY IN AN EXPORT SLAUGHTERHOUSE FREEZING ABOUT 70 T/DAY OF COLD-BONED BEEF. THE AUTOMATIC PLATE FREEZER IS AN IMPORTANT LINK IN THE DEVELOPMENT OF NOVEL MEAT PROCESSING TECHNIQUES, INCLUDING ELECTRICAL STIMULATION, HOT BONING AND PACKAGING. THE ADVANTAGES AND DRAWBACKS OF THE PLATE FREEZER AND HOT BONING ARE STUDIED. THE CHILLING AND FREEZING TIMES OF BOTH COLD-AND HOT-BONED MEAT, PACKED IN CARTONS, ARE PRESENTED, DISCUSSED AND COMPARED WITH RESPECT TO AUSTRALIAN DEPARTMENT OF AGRICULTURE REGULATIONS. EXPECTED SAVINGS FROM THE COMBINATION OF THE AUTOMATIC PLATE FREEZER AND NOVEL MEAT PROCESSING TECHNIQUES ARE DISCUSSED.
