Summary

FOR THE STUDY OF CHANGES IN THE BIOCHEMICAL COMPOSITION OF FRUIT AND VEGETABLES DURING FREEZING AND FROZEN STORAGE, IT WAS SHOWN THAT LONG-TERM STORAGE DECREASES THEIR NUTRITIONAL VALUE BUT EXTENDS THE TREATMENT SEASON. FREEZING AND THAWING PROCESSES WERE STUDIED BY NMR SPECTRA OF WATER. IT WAS SHOWN THAT AFTER DECOMPOSITION OF THE SPECTRUM COMPONENTS, THE BANDS OF PROTON ABSORPTION SEMI-LENGTHS MAY BE USED FOR THE STUDY OF THE REFRIGERATING PROCESSES OF VARIOUS PRODUCTS. THE TEMPERATURE RELATIONSHIPS SHOWING THE IRREVERSIBILITY OF THE FREEZING PROCESSES OF PLANT TISSUES ARE PRESENTED.
