Type of article: Article

Summary

This bacterium, isolated on beef mince, has an inhibiting capacity on 17 of the 21 strains of Listeria tested. Its bactericidal activity is linked to the production of a thermostable bacteriocine. The possibility is studied of using it for the inhibition of Listeria in chilled foodstuffs.
