This compact volume of the Codex basic texts on food hygiene includes the revised guidelines for the application of the HACCP system adopted by the Codex Alimentarius Commission in 2003: recommended international code of practice general principles of food hygiene; hazard analysis and critical control point (HACCP) system and guidelines for its application; principles for the establishment and application of microbiological criteria for foods; principles and guidelines for the conduct of microbiological risk assessment (for the English version, see Bulletin of the IIR, reference 2005-0524).
