Summary

This supplement (see IIR Bulletin 96-5, reference 96-3206) contains three newly revised basic texts on food hygiene adopted in June 1997. Their wide use and understanding by governments, regulatory authorities, food industries, all food handlers and consumers will ensure that food is safe and suitable for human consumption. Contents comprise: recommended international code of practice general principles of food hygiene; hazard analysis and critical control point (HACCP) system and guidelines for its application; principles for the establishment and application of microbiological criteria for foods; guidelines for the design of control measures for street-vended foods in Africa.
