Summary
The results of microbiological, physico-chemical and organoleptic surveys into refrigerated meat during storage in cold rooms equipped with bactericidal lamps are presented. Temperature and moisture conditions in the room are determined, as well as the operation rate of the bactericidal lamps ensuring the maximum storage time of refrigerated meat. C.C.
