Combined effects of postharvest time and temperature on the changes in tomato quality.

Summary

The article describes postharvest changes in 3 varieties of tomatoes representative of current French production: Daniela (a long-life variety with a non-ripening gene), Recento (grown in greenhouses), and Ferline (grown in fields). These tomato varieties are grown under similar conditions, under a shelter net. Their postharvest behaviour at different temperatures (12, 18, and 24 deg C) was evaluated through measurements of firmness, as a function of variety/harvest-stage interactions. Ethylene emission and biochemical composition are other tomato characteristics which are discussed.
