Summary
Two cryogenic freezing tunnels have been compared in terms of heat transfer performances; a reference tunnel (REF) and a tunnel using a specific and patented ventilation technology (commercialized by the Italian company SOL). Measurements of the heat transfer coefficient have been carried out using the same tunnel equipped with REF or SOL technology with 4 fans. Different geometries of products have been compared to assess the heat transfer performances. Freezing times have been measured using model foods.
