Comparison between cryogenic and conventional systems for post-harvest grape chilling.

Summary

As the world's biggest fruit producer, Brazil is also the biggest waster. These losses are due mainly to post-harvest malpractices in storage, transport, and marketing. Part of the losses are caused by the lack of a quick post-harvest cooling system close to the production sites. In order to address this problem, a quick-cooling, low-cost refrigerating equipment was developed for fruits, based on the use of liquid nitrogen as cooling fluid. The paper compares conventional and liquid-nitrogen-based cooling of "Italia" variety grapes.
