Summary

Surface hydrophobicity of actomyosin increased significantly in the first 3 days of storage. Electron microscopy showed changes in the filamentous structure of actomyosin. Actomyosin from hake stored in ice is hypothesized to undergo conformational changes resulting in drastic changes in hydrodynamic properties and a loss of the arrowhead structure of fresh actomyosin.
