Summary

For the past few years, various epidemics linked to contamination of foodstuffs originating from the food processing industry have caused deaths and serious illnesses; the initial agents are Listeria and salmonella. Companies are confronted with increasingly draconian regulations during production, transport and sale, to attain and preserve a "zero bacterium" until ultimately handing over to the consumer, by reductions in the number of germs, and by preservation using refrigeration. The consumer should then comply with this cold chain and the asepsis during transport to his home, then during storage, when he uses the product, and then during temporary storage of the leftovers.
