Summary

This technical guide is especially meant to help the different agents in the frozen product cold chain to develop temperature control and monitoring procedures. It formulates the most current recommendations, specifies how, and with what instruments, to measure, record and control air and product temperatures, indicates the cases of temperature non-conformity and the procedures to take, advises users on the choice and maintenance of equipments, and gives special attention to transfers between agents (interfaces).
