Summary
The advantages of liquid nitrogen freezing are discussed, the latest tunnel freezer is said to have a net heat extraction of 300 kilojoules/kg. Details are given of the freezing plant sizes currently available. New types of crust freezer are also reviewed in which the soft underside of products is flash frozen to prevent mesh belt marks and product damage prior to total freezing in a spiral freezer. They can also be used for small or particulate products such as shrimps, mushrooms, berries and soft fruit pieces. G.R.S.
