SIX CRYOPROTECTIVE AGENTS WERE TESTED ON CELLS HARVESTED FROM 4 PH-REGULATED FERMENTATIONS OF A NONBITTER S. LACTIS STRAIN LACTOSE OR SUCROSE CENTRIFUGATION PELLETS STORED AT 233 OR 203 K (-40 OR -70 DEG C) RESULTED IN THE HIGHEST VIABILITY AND ACID-PRODUCING ACTIVITY OF FROZEN CONCENTRATED STARTERS.
