Summary

LOWERING THE OXYGEN LEVEL BELOW 2% RAISES SOME NEW PROBLEMS. THERE IS IMPROVEMENT OF THE TEXTURAL QUALITY AND RETARDATION OF THE RIPENING METABOLISM ON ONE SIDE, BUT ALL THIS ON COSTS OF THE DEVELOPMENT TO FULL AROMATIC APPLES. THIS MAY BE A MATTER OF VARIETIES. BENEFITS MAY BE GAINED BY THOSE AROMATIC VARIETIES WHICH LOOSE THEIR TEXTURAL QUALITY VERY QUICKLY OR THOSE THAT ARE LIABLE TO SCALD. APPLE STORAGE WITH OXYGEN CONCENTRATIONS OF 2 AND 1% HAS REVEALED A HIGH PERCENTAGE OF SOUND FRUIT, BETTER TEXTURAL QUALITIES AND LOWER SCALD LIABILITY. BUT THERE ARE ALSO PROOFS OF HINDERED FLAVOUR DEVELOPMENTS.
