Summary

A 2 HERTZ CURRENT DURING 40 MIN POST MORTEM CAUSES NEITHER THE DETERIORATION OF TISSUES NOR THE IRREGULAR LENGTH OF SARCOMERS, WHEREAS AT 60 HERTZ THE FORMATION OF CONTRACTIONS AND THE FRAGMENTATION OF SARCOMERS IS OBSERVED. THESE OBSERVATIONS CONFIRM THAT THE FRAGMENTATION OF FIBRES CONTRIBUTES TO THE TENDERIZING EFFECT OF HIGH VOLTAGE ELECTRICAL STIMULATION. (Bibliogr. int. CDIUPA-CNRS, FR., 87-210-221392.
