SACCHAROMYCES CEREVISIAE SUSPENSIONS IN A SALINE MEDIUM WERE FROZEN THEN THAWED. SURVIVAL WAS MORE SIGNIFICANT WHEN THE SUSPENSION WAS FROZEN AT TEMPERATURES FAVOURING THE FORMATION OF A EUTECTIC MIXTURE. AT HIGHER TEMPERATURES, SURVIVAL DEPENDS ON SODIUM CHLORIDE CONCENTRATION.
