Effects of refrigeration on the development of microbial flora in vegetables.

Summary

Because of condensation, any break in the cold chain leads to a thermal shock that favours the development of bacteria and resumed growth of microorganisms. Regarding psychrotroph bacteria, the article focuses on species which are pathogenic for man, even if risks are low. Hence the use of refrigeration must be generalized and optimized, as part of quality assurance initiatives, like those used in other sectors.
