Summary

This final report of a three-year project has been carried out by the Campden and Chorleywood Food Research Association. It compares the analytical and processing properties of wheat stored under controlled conditions with the objective of identifying any quality changes which might occur with time of storage. It sums up the effects on: milling performance, flour quality characteristics, dough rheology, breadmaking quality, protein functionality; starch pasting properties; lipid analysis; specific studies on seasonal variations in quality.
