ELECTRICAL STIMULATION (ES) CAN BE USED EFFECTIVELY IN EITHER LOW VOLTAGE FORM OR, WITH APPROPRIATE SAFETY PRECAUTIONS, WITH HIGH VOLTAGES, TO ALLOW RAPID CHILLING WITHOUT RISK OF TOUGHENING MEAT BY COLD SHORTENING. IN GENERAL, ES PRODUCES MEAT WHICH IS MORE TENDER OR WHICH BECOMES TENDER EARLIER. LOW VOLTAGE ES, USED IMMEDIATELY AFTER STUNNING, MAY ALSO IMPROVE BLEEDING AND GIVE THE CONSUMER LIGHTER COLOURED MEAT. ES IS ALREADY BEING USED IN GERMANY, BUT ONLY TO STIFFEN THE BACKBONE OF CARCASSES FOR EASIER MECHANICAL REMOVAL OF HIDES.
