Summary
Chill room design and factors affecting the cooling rate of foodstuffs are reviewed. Legislation which affects food temperatures is discussed in detail and a table is given of existing and proposed legislation. Some problems associated with the cooling of convenience foods, in particular cooked ingredients in bins are also discussed. Refrigerants are considered at length, notably a review of current types together with a timetable for cuts in CFC and HCFC production. Future developments using alternative refrigerants and cooling technologies are then reviewed, and the use of irradiation is also mentioned. G.R.S.
