Summary
Changes in eating habits: steady development of ready-to-serve products and growing preference for natural foods, and the progression of both European and national regulations, aimed at protecting the environment and public health, will significally alter the design and operation of refrigerating systems in the next decade. Looking at the current situation in the UK, the consequences of the implementation of the European market are examined, i.e. the requirement of precise temperature control during storage, especially of prepared food.
