THE AUTHOR INITIALLY REVIEWS THE PROBLEMS OF RELIABLE DESIGN DATA IN THE PERIOD PRECEDING THE UNITED KINGDOM'S MEMBERSHIP OF THE EEC, AND DETAILS RESEARCH WHICH WAS IMPLEMENTED TO OVERCOME THIS, NOTABLY IN CONNECTION WITH COOLING OF MEAT. CHANGES IN MARKET REQUIREMENTS AND THE IMPACT OF LEGISLATION, NOTABLY THE FOOD HYGIENE REGULATIONS ARE CONSIDERED AT LENGTH, NOT FORGETTING THE TEMPERATURE REQUIREMENTS FOR TRANSPORT AS GIVEN IN THE AGREEMENT ON THE INTERNATIONAL CARRIAGE OF PRAE FOODSTUFFS (ATP).
