BRIEF REPORT OF THE FREEZE-DRYING PROCESSES FOR PURE MONOSTRAINS OF SELECTED LACTIC ACID BACTERIA, OBTAINED AT CONCENTRATIONS OF 100 TO 1,000 MILLIARD CELLS/G OF DRY PRODUCT. THEY ARE THEN GROUPED IN ORDER TO MAKE UP A DEFINITIVE MIXTURE, PACKED IN BAGS UNDER NITROGEN. THE CONDITIONS FOR THE USE OF SUCH FREEZE-DRIED STARTER CONCENTRATES IN CHEESE-MAKING ARE DETAILED, COMPARING THEIR ADVANTAGES (SUPPRESSION OF LATER YEAST PRODUCTION IN THE CHEESE-MAKING PLANT, PURITY, EASY USE) AND THEIR DRAWBACKS, MAINLY LINKED TO CHANGES IN WORKING PRACTICE.
