Summary

THE AUTHORS DISCUSS THE EFFECT OF 10 PROTECTIVE MEDIA ON THE FREEZING TO 213 K AND FREEZE-DRYING OF FIVESTEMS OF SACCHAROMYCES CEREVISIAE. THEY MADE INVESTIGATIONS INTO THE EFFECT OF SKIM MILK ADDED WITH SUGARS ON FREEZE-DRYING AND THEY OBSERVED VARIOUS RATES OF RESISTANCE TO FREEZING AND FREEZE-DRYING ACCORDING TO THE PROTECTIVE MEDIA USED. THE VIABILITY OF YEASTS IS PRESERVED AT BEST BETWEEN 81.2 AND 98.5% BY FREEZING WITH 10% GLYCERIN, 2. 5% SODIUM CHLORIDE AND WITH 5% LACTOSE AND 2.5% SODIUM CHLORIDE. AFTER FREEZE-DRYING THE AUTHORS OBSERVED A CONSIDERABLE EFFECTOF 2.5% SODIUM CHLORIDE AND 5% LACTOSE IN AQUEOUS SOLUTION OR COMBINED WITH SKIM MILK. THE SURVIVAL RATE IS 34.2%.
