Summary

Freezing permits long term storage of melons packed in high-density polyethylene bags and put in PVC boxes. Honey Dew sp. melons have been quick-frozen at -34 deg C with R22, and stored for 1 year at -24 deg C. Weight loss, pH changes, acidity, dry matter and reducing sugar contents are studied. Melons quick-frozen with a 27 deg Brix syrup and stored at -24 deg C are still good-tasting.
