Summary

The author defines the specific requirements involved in packaging low temperature-stored products, i.e., envelopes, packages, wooden and cardboard boxes. Water vapour-, oxygen-, and gas-tightness are examined in more detail; the frosting phenomenon in packages is described and ways to limit it are specified. When displayed, products undergo heat exchanges mainly of a radiative type. Exchanges can be limited greatly by opting for infrared reflecting surfaces. Finally, the author explains how the heating method influences decisions on the type of packaging.
