Summary

THE AIM OF THIS STUDY HAS BEEN TO MAKE FURTHER INVESTIGATION ON THE POSSIBILITY TO IMPROVE AND RATIONALIZE THE HANDLING ON BOARD BY PUTTING THE FISH INTO ICED SEA WATER IMMEDIATELY AFTER BLEEDING OR AFTER A BLEEDING AND A GUTTING PROCESS. IT WAS FOUND THAT FILLETS FROM BOTH BLEEDED UNGUTTED AND BLEEDED, GUTTED COD CAUGHT IN MARCH AND STORED IN ICED SEA WATER WERE OF VERY GOOD QUALITY DURING THE FIRST 9 DAYS OF STORAGE. HOWEVER, AFTER ONE WEEK OF STORAGE OF UNGUTTED COD A GREENISH COLOUR BEGAN TO SHOW UP FOLLOWED BY AN INCREASING BAD SMELL.
