Summary
Trends in machinery design for modified atmosphere packaging of chilled foods are discussed and illustrated. Spiral belt freezers with new air circulation systems to improve product temperatures and increase intervals between defrosts are reviewed. A 5-day running period between defrosts at -35 deg C air temperature with a throughput of 3,600 pounds/hour has been achieved. Details are also given of the refrigeration systems for these freezers.
