THE STORAGE LIFE OF AMAZONIAN FRESHWATER CATFISH IN ICE WAS STUDIED BY ORGANOLEPTIC EVALUATION (FOR RAW AND COOKED FISH), BY USING THE , BY DETERMINING TOTAL VOLATILE BASES (TVB), BY DETERMINING THE PH AND BY BACTERIOLOGICAL ANALYSES. THE ORGANOLEPTIC STUDY SHOWED THAT FISH DETERIORATES AFTER 12 TO 16 DAYS IN ICE. THE OCCURRENCE OF STRONG PUTRID FAECAL ODOURS AND TEXTURE SOFTENING ARE THE MAIN REASONS MAKING THE FISH INACCEPTABLE.
