REGULATIONS IN THE USA REQUIRE THAT POULTRY BE CHILLED IMMEDIATELY AFTER SLAUGHTER AND EVISCERATION. THE EEC BANNED WATER CHILLING BUT NO SUITABLE ALTERNATIVE HAS YET BEEN FOUND AND THE RULING HAS NOT BEEN ENFORCED. THE PAPER REVIEWS AT LENGTH THE PUBLISHED LITERATURE. A TABLE OF COMPARISONS OF VARIOUS BROILER CHILLING METHODS TO IMMERSION CHILLING INDICATES THAT CONTROLLED IMMERSION CHILLING AS REGULATED IN THE USA OR ACCORDING TO THE CODE OF PRACTICE IS STILL THE MOST EFFICIENT AND LEAST COSTLY METHOD.
