IN 1981, THE FRENCH INDUSTRIAL PRODUCTION OF ALL GROUND MEAT PRODUCTS IS EVALUATED AT 66,763 T, OF WHICH 22% CHILLED AND 78% FROZEN PRODUCTS. THE PRODUCTION OF GROUND BEEF (INCLUDING THAT SEASONED) INCREASED FROM 45,223 T IN 1980 TO 53,413 T IN 1981 (+ 18%), CORRESPONDING TO 12,388 AND 14,377 T OF CHILLED MEAT AND 33,820 AND 39,036 T OF FROZEN MEAT, RESPECTIVELY ;FOR THE LATTER, THE PRODUCTION OF INDIVIDUAL PORTIONS INCREASED BY 16%, THAT OF ROASTS DECREASED BY 12%.
