Summary
Existing technology cannot eliminate Listeria from processing plants. Therefore, the processing environment must be vigorously managed so that the probability of direct contamination from ingredients and surfaces and cross-contamination from the environment are minimized. This will require a commitment by management to support the costs associated with implementing a Listeria control program.
