Industry perspectives on Listeria monocytogenes in foods: manufacturing and processing.
Author(s) : BERNARD D., SVEUM W.
Type of article: Article
Summary
Existing technology cannot eliminate Listeria from processing plants. Therefore, the processing environment must be vigorously managed so that the probability of direct contamination from ingredients and surfaces and cross-contamination from the environment are minimized. This will require a commitment by management to support the costs associated with implementing a Listeria control program.
