Summary

Study on croquettes made with dark chicken meat, which were precooked and stored in air or under a modified atmosphere (76% CO2-13.3% N2-10.7% O2 and 80% CO2-20% N2-0% O2) at 3.7 and 11 deg C. Study of the changes in L. monocytogenes and Pseudomonas fluorescens growth in single or mixed culture. The growth kinetics vary with temperature and atmosphere. Application to optimization of storage conditions for meat croquettes.
