Summary

The aim of this study is to evaluate the fate of Listeria monocytogenes during shelf-life of bovine and horse meat products. Minced meat with added flavours and spices was contaminated with a suspension containing three strains of Listeria monocytogenes and the hamburgers obtained were packed in modified atmosphere and kept at different temperatures in order to simulate domestic preservation and cold chain breaks. At the same time control samples were kept at the same temperatures to check intrinsic characteristic of foodstuffs. Bovine and horse hamburgers do not support growth of Listeria monocytogenes during shelf-life assigned, regardless of preservation temperature.
