Summary

These workshop proceedings consist of a compilation of notes which are outputs from projects from a number of European Union and/or European Union administered programmes. They include: papers from the FLAIR-FLOW EUROPE "RETUER" (ready-to-use European research) workshop, held in Dublin, May 19, 1998: freezing and packaging for optimum quality; temperature abuse and shelf life of frozen foods; quality and safety in chilled foods; reports on cold chain, frozen food quality, HACCP and minimally processed food that have been reported in previous IIR Bulletins (see references 99-1296 à 99-1298).
