Summary

This report is part of the FAIR RTD Programme organized and sponsored by the European Community (See also this Bulletin, references 99-1297 and 99-1298). It summarizes all data of safety criteria put forward in legislation and good manufacturing codes throughout the EU. It contains the following information: 1. Inventory of legislation: European and national food legislation. The focus of this section is differences in national legislation concerning the implementation of Directive 93/49/EEC, temperature requirements and microbiological norms for minimally processed foods. 2. Inventory of good manufacturing practices: Codex Alimentarius Commission, European and national levels. Different aspects of national good manufacturing practices codes are discussed: general hygiene requirements, process parameters and safety criteria and microbiological norms.
