Summary

French version of FLAIR-FLOW information sheets that are designed to provide information on results obtained by researchers within the framework of European Commission-funded research programmes. These 71 sheets have been disseminated throughout Europe thanks to a network comprising 19 national delegates. A brochure (in English) describes the project programme and provides a list of members of the network. Among various projects, the following are noteworthy: very fast chilling of beef; how to improve the quality of pork and chicken meat; microbiolocal control in the meat industry; quality criteria for fresh foods; the quality of deep-frozen fish; preservation using combined processing methods; biopreservation of vegetables in a modified atmosphere modifiée; practical guide to the cold chain; future impact of food technology; the texture of frozen fish; small- and medium-sized European food companies' hubs; monitoring of the shelf life of fish; new packaging for modified atmospheres; Evaluation of the Freshness of Fish (IIR publication, see ref. 98-3275). Certain findings have aready been published in the Bulletin of the IIR. (See also the News from Laboratories section in this issue of the Bulletin.)
