DIFFERENT METHODS OF FISH CHILLING ARE DESCRIBED, VIZ REFRIGE RATED SEA WATER, ICED CHEMICAL COMPOUNDS AND VACUUM CONTAINERS. REFERENCE IS MADE TO MODIFIED ATMOSPHERES AND IRRADIATION FOR FISH STORAGE AND PRESERVATION. THE ARTICLE CONCLUDES WITH A DISCUSSION ON CHEMICAL, ENZYMATIC AND MICROBIOLOGICAL CHANGES TAKING PLACE IN FISH DURING COLD STORAGE.
