Summary

EXAMINATION OF THE INFLUENCE OF THE FREEZE-DRYING AND ONE-YEAR STORAGE OF WHOLE STRAWBERRIES AND RASPBERRIES ON THEIR MICROBIAL COUNTS. FREEZE-DRYING REDUCED COUNTS BY 10-18% AND A YEAR'S STORAGE RESULTED IN A 35% REDUCTION. IN THE CASE OF THE FORMER PROCESS, YEASTS AND MOULDS WERE REDUCED BY 5%, WITH A 25% REDUCTION IN THE CASE OF THE LATTER. THERE WAS LITTLE OR NO CHANGE IN THE SPORE FORMS OF AEROBIC SAPROPHYTES IN EITHER THE FREEZE-DRIED OR STORED SAMPLES.
