Summary

A unified approach to prediction of cooling, freezing and thawing processes, is proposed based on one-dimensional solutions to the non-linear moving-boundary heat conduction problem. It uses a general shape factor to take into account the product geometry. The method requires reliable data. The model was applied to different shapes of Tylose, meat and some fish species. Predicted results are compared with experimental data.
