Modified atmosphere packaging for green pepper: mathematical design and experimental verification.

Summary

In design of passive MAP the package permeability should counterbalance the respiration of the produce and led to a steady-state gas concentration inside the package, similar to the optimal storage atmosphere for the product. The optimal storage atmosphere was established and film permeability requirements were then fixed. Afterwards, mathematical predictions were verified against experiments. One of the tested films extended the shelf life of green peppers up to 14 days in refrigerated state (11 plus or minus 1 °C).
