Optimization of parameters for fluidized freezing of fruits and vegetables.

Summary

The main parameters of the freezing process with fluidized or fixed beds are presented. Two freezers, one with two belts, the other with a single belt, for freezing two tonnes of strawberries per hour, are compared. The operation is more favourable in terms of energy with a single belt conveyor due to simpler construction. A KFT-500 freezer, designed by a group of engineers in Cracow is described in detail. The fan motor operates at variable speed. Results with heavy and light products are presented.
