Summary
Bacteria in quick-frozen prawns, chilled custard and pilaf rice do not survive microwave irradiation for 40 seconds, 60 seconds and 4 minutes, respectively. Time of pasteurization necessary to eliminate E. coli and Staphylococcus aureus is approximately 30 seconds and 90 seconds for B. cereus. B. cereus spores survive at 100 deg C for 90 seconds. The process eliminating bacteria does not only depend on temperature but also on other effects of microwaves.
